Ingredients
1 round bread loaf (sourdough recommended)
1 wheel of Brie cheese
2-3 cloves garlic, minced
2 tbsp olive oil
1 tbsp fresh rosemary or thyme, chopped
2 tbsp honey (plus more for drizzling)
Fresh pomegranate seeds (optional)
Preparation
1. Prep Your Heat Source
Campfire: Prepare hot coals for cooking.
Oven: Preheat to 350°F (175°C).
2. Prepare the Bread Bowl
Place the Brie wheel on top of the bread and trace around it with a knife.
Scoop out the circular section of bread where the Brie will sit.
Cut deep slices around the bread, going about ¾ of the way down—these will be the pull-apart pieces.
3. Make the Garlic & Herb Infusion
In a small bowl, mix the minced garlic, olive oil, and chopped rosemary.
Drizzle half of this mixture over the bread, making sure it seeps into the cuts.
4. Assemble the Cheese Bowl
Nestle the Brie wheel into the center of the bread.
Pour the remaining garlic-oil mixture over the cheese and into the bread slices.
Drizzle honey over the top.
Sprinkle pomegranate seeds for a fresh, juicy contrast (before or after baking—your choice).
5. Bake to Perfection
Campfire: Place the bread bowl in a cast iron pot, cover, and cook over hot coals for 40 minutes or until the Brie is melted and gooey.
Oven: Place the bread bowl on a baking sheet and bake for 10-15 minutes until the Brie is soft and bubbly.
6. Serve & Enjoy
Drizzle with extra honey before serving.
Tear, dip, and savor the cheesy, herby goodness!
Health Benefits
Brie is a great source of calcium and protein, while rosemary and garlic bring anti-inflammatory properties. Pomegranate seeds add a boost of antioxidants, making this indulgent dish a little more wholesome.
