Ingredients
For the Caramelized Onion Chutney:
4 large onions, thinly sliced
2 tbsp olive oil
2 tbsp butter
100g brown sugar
75ml balsamic vinegar
50ml red wine vinegar
1 tsp Dijon mustard
1 tsp salt
½ tsp black pepper
½ tsp dried thyme
½ tsp chili flakes (optional)
For the Baguettes:
1 baguette, sliced into rounds
2 tbsp olive oil
½ cup Brown’s Bleu Cheese Dressing
Fresh chives or thyme, for garnish
Preparation
Prepare the Onion Chutney:
Heat olive oil and butter in a pan over medium heat. Add onions and cook slowly for 20–25 minutes until soft and caramelized.
Stir in brown sugar, balsamic vinegar, red wine vinegar, Dijon mustard, salt, pepper, thyme, and chili flakes (if using). Cook for another 15–20 minutes until thickened and glossy. Let it cool.
Prepare the Baguette Slices:
Preheat oven to 180°C (350°F).
Brush baguette slices with olive oil and toast for 8–10 minutes until golden and crisp.
Assemble:
Spread Brown’s Bleu Cheese Dressing onto each toasted baguette slice.
Top with a spoonful of caramelized onion chutney.
Garnish with fresh chives or thyme.
