Ingredients

  • 1 (8-ounce) chunk of Brown’s Dairy Feta Cheese (salty, creamy, and perfect for roasting!)

  • 1 red pepper, chopped

  • 4 Roma tomatoes, chopped

  • 1 onion, chopped

  • 2 sprigs rosemary

  • 1 bulb garlic, top sliced off

  • Freshly cracked black pepper

  • ¼ cup olive oil

  • 4 cups vegetable broth

  • Crackers (for serving – because soup and crackers are a match made in heaven!)

Preparation

Preheat the Oven: Set your oven to 400°F (200°C). Line a large baking sheet with parchment paper.

  1. Prep the Veggies: Place the Brown’s Dairy Feta Cheese, red pepper, tomatoes, onion, rosemary, and garlic bulb on the prepared sheet pan. Season everything with black pepper and drizzle with olive oil.

  2. Roast to Perfection: Bake for 45 minutes, or until the vegetables are tender and the feta is soft and melty.

  3. Cool the Garlic: Remove the roasted garlic bulb and let it cool slightly. Once cool enough to handle, squeeze the roasted garlic cloves out of their skins.

  4. Blend It Up: Transfer the roasted vegetables, feta, and roasted garlic to a blender. Add the vegetable broth and blend for 2 minutes, or until smooth and creamy.

  5. Serve and Enjoy: Pour the soup into bowls and serve with Crackers or a side of grilled cheese for dipping.
